The Dalmore's new Quintessence Whisky goes through quite a process before its final bottling. It is the first single malt whisky of its kind to to be finished in five Californian red wine casks. The process begins with aging in American white oak ex-Bourbon barrels and then finds its way into five different red wine casks use for Zinfandel, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon. Quintessence launches tomorrow at London's Selfridges and will be available at other select whisky retailers on August 11th.
